I started freelancing part-time in 2013. When I started, I taught paralegal studies and was an adjunct criminal justice instructor as well. I was also working as a paralegal in a very small law office (two lawyers). I had some very personal reasons that made it clear to me that self-employment was really my only option (on top of the fact that it quickly came to my attention that the male adjuncts with fewer credentials made more money; I had zero desire to find an attorney or fight the matter).

I am the family caregiver. I am 42.5 (my half birthday was on March 12). My mother is 24 years older than I am. She has paranoid schizophrenia, bipolar II disorder, COPD, and, as of just a few weeks ago, throat cancer. Now, the thing you should know about her throat cancer is that if you had to have it, you want what she’s got. That doesn’t mean that she’s in for a good time. It isn’t always easy to find tasty (and normal) vegan recipes…especially relatively easy ones that don’t require 9,000,000 (specialized) ingredients that you probably won’t find. (Pro tip if you’re relatively new — you can substitute just about any vegan ingredient with another. For example, it calls for a nut-based cheese and you don’t like it. So, use a vegan cheese you like. It calls for soy milk and you hate soy milk. That’s cool…use a plant-based milk you like. You don’t like the way almond milk makes mashed potatoes taste.
