Savory Sunday: Vegan recipe round-up to make your week easier!

It isn’t always easy to find tasty (and normal) vegan recipes…especially relatively easy ones that don’t require 9,000,000 (specialized) ingredients that you probably won’t find. (Pro tip if you’re relatively new — you can substitute just about any vegan ingredient with another. For example, it calls for a nut-based cheese and you don’t like it. So, use a vegan cheese you like. It calls for soy milk and you hate soy milk. That’s cool…use a plant-based milk you like. You don’t like the way almond milk makes mashed potatoes taste. I feel you — use vegetable broth.)

I’m doing the hard work for you and featuring some awesome relatively simple vegan recipes. And if you’re not vegan? Don’t worry — I called all my local hospitals and the protein deficiency wards are still empty! Imagine that.

Roasted Garlic Tomato Spaghettini with Garlic Parmesan Bread Crumbs

This simple recipe is found on This Savory Vegan. This Savory Vegan also offers weekly vegan menus (for free, I might add). One thing I do to make this recipe easier is to just use…jarred tomato sauce. We do tend to read labels to limit added sugar. You do you on that. We love this recipe. It’s kid-friendly, but it is definitely faster and easier if you don’t bother with using cherry or grape tomatoes and use canned tomatoes or sauce.

Mashed Potato Enchiladas

I know, I know. I was skeptical…until we did it. This recipe is found on Connoisseurus Veg. Her website is the best. I find all kinds of amazing things on there, but this one is a staple because I can make an entire pan or just a few for lunch (red sauce isn't hard to make). You can use potatoes and make mashed potatoes or just use instant. There’s no shame in using instant mashed potatoes. I always have a box of instant mashed potatoes. I use veggie broth and not plant-based milk. It makes a richer tasting mashed potato.

Vegan Corned Beef

Coming up fast on St. Patrick’s Day and having an Irish heritage on my mother’s side (County Wicklow, and yes, I know that St. Patrick’s Day isn’t a “thing” in Ireland especially when compared to the US), I also enjoy making (and eating) Irish food. I’m always on the look out for really tasty vegan dishes. My husband loves corned beef. My opinion…well…

Anyway, Zardy Plants has an excellent vegan corned beef (that doesn’t look disgusting — which is why I never liked traditional corned beef). It tastes amazing. I actually use their corned beef rub to make my own plant-based sammich “meat.”

Vegan Blueberry Poptarts

I have a child who loves Poptarts. He does eat other breakfast foods. He loves apple cinnamon oatmeal, breakfast burritos, and biscuits with gravy. Expanding his breakfast palate is relatively new. Not long ago, I was on the hunt for a DIY poptart recipe because…I like to cook and I like to bake. I came across this vegan blueberry poptarts recipe on Sweet Like Cocoa’s website. We went with strawberry (because it’s the only kind my kid will eat). Mine came out ugly (whoops!) but edible! Give it a shot and let me know.
